Gluten-Free Turkey Burgers

Certain kinds of food just make dinnertime more light-hearted and fun, and for me, burgers are definitely one of them! These gluten-free turkey burgers will quickly become a dinnertime favorite with their great flavor, tender texture, and ease of preparation.

Burgers were one of those foods that I enjoyed eating but didn't always love to cook. Pan-frying often resulted in a dry burger and required constant monitoring to ensure they didn't get too brown. You'll love this recipe because it is hassle-free — no more babysitting the stove!

By forming the burgers on parchment paper, popping them in the oven, and then quickly searing for a gorgeous golden finish, these burgers turn out perfect every time. They also come together so quickly with ground turkey and simple ingredients you'll already have in your pantry and fridge. 

The result? Tender, flavorful turkey burgers with a beautiful golden crust — consistently delicious every single time. And they pair perfectly with homemade hamburger buns with fresh milled flour. Let's give your family the joy of burgers for dinner tonight!

Ingredients

  • Ground Turkey - I usually use turkey that's 93% / 7% lean to fat ratio when making these, but really any ratio will work beautifully.
  • Egg - Helps bind the burgers together and keeps them from falling apart.
  • Almond Flour - Adds structure and keeps these gluten-free. If you're not requiring gluten-free, you can substitute breadcrumbs here.
  • Garlic - I like to use fresh garlic to give the burgers a little more juice and bright flavor, but ground garlic also works well.
  • Ketchup - Adds moisture and a touch of sweetness.
  • Mustard - Any mustard will give great flavor, but I usually use yellow mustard in these for that classic burger taste.
  • Worcestershire Sauce - This is the secret ingredient that gives the burgers extra flavor depth.
  • Butter - Gives the burgers more moisture when cooking and helps create that golden, delicious crust.
  • Salt - Essential for bringing out all the flavors.
  • Olive oil - for browning after baking in the oven.

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375 degrees F.

Step 2: Combine the Ingredients

In a large mixing bowl, add the ground turkey, egg, almond flour, garlic, ketchup, mustard, Worcestershire sauce, butter, and salt.

Step 3: Mix Until Incorporated

Mix the ingredients together until they are well incorporated. I find it easiest to do this with a fork or your hands.

Step 4: Prepare the Baking Sheet

Line a sheet pan with parchment paper.

Step 5: Form the Patties

Shape the meat mixture into 5 burger patties and place on the prepared baking sheet. I like to do this by forming the mixture into a ball with my hands and then flattening it on the baking sheet. From there, I try to shape the patties into a nice, round circle. I also make them a little flatter than I'd like, knowing that they will shrink a bit when cooking in the oven.

Step 6: Bake the Burgers

Place the baking sheet in the oven and bake for 25 minutes or until the burgers reach an internal temperature of 165 degrees F.

Step 7: Heat the Skillet

Towards the end of the burgers' bake time, heat a large skillet over medium/low heat. Once hot, add olive oil.

Step 8: Sear for a Golden Crust

Once they are done baking, remove the burgers from the oven and transfer to the oiled skillet. Sear the burgers for about 2 minutes on each side until they are a nice golden, crispy brown.

Step 9: Serve and Enjoy

Serve on a bun with your favorite burger toppings and condiments. Enjoy!

Substitutions

  • Almond Flour - If you don't require gluten-free, feel free to replace with breadcrumbs.
  • Bun - You can replace the homemade buns with gluten-free or regular store-bought buns, or you can enjoy in a lettuce wrap.
  • Softened Butter - You can replace the butter with 1 tablespoon of mayo or Greek yogurt.

Variations

  • Traditional - Serve like a traditional burger with cheese, lettuce, tomato, onion, ketchup, and mustard.
  • Spicy - Top with avocado and spicy mayo.
  • BBQ - Serve with melted cheese and BBQ sauce (my kids' favorite!)

Equipment

  • Large mixing bowl
  • Baking sheet
  • Parchment paper
  • Skillet (I prefer stainless steel or cast iron)
  • Spatula

Storage

Store cooked burgers in the fridge for 2-3 days.

You can also mix the ingredients ahead of time and store in fridge until ready to shape and bake.

Top Tip

Form the burgers a little thinner than you'd like because they will shrink and puff up a bit when baking in the oven.
