Instructions

Step 1: Mill the Flour

Mill the wheat berries into flour using a home grain mill — 400g total: 250g for the muffins and 150g for the streusel topping.

Step 2: Make the Streusel Topping

Melt the butter, then stir in the fresh milled flour, brown sugar, cinnamon, and salt until a crumbly mixture forms. Set aside. (Skip this step if you'd rather make the muffins without topping — just mill 250g of flour in step 1 instead of 400g.)

Step 3: Preheat the Oven and Prep the Muffin Tin

Preheat your oven to 350°F and line a 12-cup muffin tin with liners, or grease well.

Step 4: Mix the Wet Ingredients

In a large mixing bowl, combine pumpkin puree, eggs, maple syrup, vanilla extract, and brown sugar. Whisk together until combined.

Step 5: Add the Dry Ingredients

Step 6: Stir in the Melted Butter

Add the melted butter last, stirring until just incorporated.

Step 7: Divide the Batter & Add Streusel Topping

Divide the batter evenly between the muffin cups, filling each about ¾ full. Top each muffin with a heaping tablespoon of streusel, then evenly sprinkle any remaining streusel over the muffins until it's all gone.

Step 8: Bake Until Golden and Set

Bake at 350°F for 25-30 minutes (27 minutes is my sweet spot), or until a toothpick inserted in the center comes out clean. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely before topping with the maple icing and serving.

Hint: For even muffins, use a 1.5-tablespoon cookie scoop to divide the batter — one heaping scoop per liner, then go back around with a level scoop to use up the rest of the batter."

Substitutions

  • Maple syrup → honey - 1:1 swap but it could impact the flavor a bit and you'll want to watch for browning quicker when baking. Honey tends to bake faster than maple syrup.
  • Butter → melted coconut oil - 1:1 swap for dairy-free but could impact the flavor a bit.
  • Eggs → flax eggs - 1 tablespoon ground flaxseed + 3 tablespoon water per egg, rested 5 min, for egg-free but texture may be a little denser.
  • Soft white wheat → other fresh milled flour varieties - quick breads are very forgiving so feel free to swap out the white wheat 1:1 for another wheat berry of choice. Although other wheat berries will work, they could impact the texture and density a bit.

Variations

  • Maple icing drizzle - Drizzle these with maple icing once cooled.
  • Chopped pecans - Fold in ½ cup right before dividing the batter for a little added crunch.

Storage

Once cooled, store the muffins in an airtight container at room temperature for 3 to 4 days.

Freeze them individually for an easy grab-and-go snack. Wrap tightly in plastic wrap or foil, place in a freezer-safe bag, and store for up to 3-4 months. Thaw at room temperature. If topped with streusel, the texture may soften slightly after thawing.

Top Tip

Add the melted butter last, after the dry ingredients are already mixed in. Mixing it in this order avoids overmixing the batter once the baking soda and baking powder are activated (which can make the muffins tough or cause them to sink), keeps the melted butter from seizing up against the other cold ingredients, and coats the batter for a richer, longer-lasting butter flavor and a more tender crumb.

FAQ

Can I use pumpkin pie filling instead of pumpkin puree?

No — pumpkin pie filling already has sugar and spices mixed in, which will throw off the recipe. Just use plain pumpkin puree.

Can I double this recipe?

Yes. Just use a second muffin tin, or bake in batches.

Can I omit the brown sugar if I only want to use natural sugars?

Yes! This will make the muffins slightly less sweet but should have no other impact on the finished muffins.

Do I have to use fresh milled flour in this recipe?

This recipe was specifically made for fresh milled flour, but you should be able to make these muffins by swapping out the fresh milled flour for store-bought flour 1:1 by weight.

Do I have to use soft white wheat berries?

Nope! Quick breads are very forgiving so feel free to use any wheat berry you'd like. If you decide to use a different wheat berry, just make sure to swap it 1:1 by weight. This can also have an impact on the density and texture of the loaf.

Can I skip the streusel?

Yes — just mill 250g of flour in step 1 instead of 400g and skip the streusel-making step. They're just as good without it, or swap the topping for a maple icing drizzle instead once they've cooled.

  • 2 tablespoon melted butter
