- Mill the wheat berries into flour using a home grain mill — 280g total: 250g for the muffins and 30g for the topping.250 g wheat berries

- Preheat your oven to 350°F and line a 12-cup muffin tin with liners, or grease well.

- Add the melted butter last, stirring until just incorporated.¼ cup melted butter
- Divide the batter evenly among the muffin cups, filling each about ¾ full. Top each muffin with a spoonful of the pecan topping, pressing gently so it makes contact with the batter.
- Bake at 350°F for 25-30 minutes, or until a toothpick inserted in the center comes out clean and the topping looks glossy and slightly darker rather than wet.
Notes
Hint: For even muffins, use a 1.5-tablespoon cookie scoop to divide the batter — one heaping scoop per liner, then go back around with a level scoop to use up the rest of the batter.
